California Dried Figs

Are allowed to fully ripen and partially dry on the tree for maximum natural sweetness. Once dried, the moisture is equalized, the fruit is harvested, sized and sorted. Quality fruit is washed thoroughly, inspected and packaged. Dried figs are in good supply and available year round. Dark colored figs, such as the Black Mission, are allowed to dry naturally. However, lighter figs, such as Calimyrna, Kadota, and Conadria, may be sulfured or bleached to prevent browning.

California Fig Pieces

Easy-to-use 100% Dried Fig Pieces are typically diced (1/4 to 3/8-inch thickness; 0.64 to 0.95 cm) and and coated with dextrose, rice flour or oat flour for a free flowing product. They are available as natural pieces or flavored and colored. Fig Pieces are manufactured to buyer specifications for color and taste. Pieces are used in breads, cookies, packaged mixes, cakes, and a variety of cereals, and confectionery items.

California Fig Concentrate

Made from a water extract derived by leaching dried figs with water and concentrating the extract under vacuum to a minimum of 70° Brix, Fig Concentrate is used as a natural flavoring and sweeter replacement for sucrose, corn syrup and molasses. It contains no preservatives or additives. Fig Concentrate provides natural amber color and anti-staling benefits to breads.

California Fig Powder

Light to medium brown in color with mild fig characteristics and low sweetness. Fig Powder is typically used as a binding and bulking agent. It is free flowing and contains 1% or less anti-caking agent. California Fig Powder is a cost-effective replacement for more expensive fruit powders.

California Fig Paste

Made with 100% fig, no fillers or extenders are added. The verification of stock for every lot is certified by the American Council for Food Safety Dried Fruit Association (DFA) of California prior to grinding. Fig Paste is available with seeds (regular) or seedless. Use regular paste in granola cereals and health bars to complement chewy, crunchy ingredients. The smooth texture of seedless paste makes it ideal for products where an even texture is desirable, such as fillings and puddings. In addition to fig product applications, Fig Paste may be combined with more expensive fruits to lower costs.

California Fig Nuggets

Made with California Fig Paste and other ingredients, such as fruit fiber solids, dextrose, cornstarch, vegetable oil and/or glycerin., Extruded Fig Nuggets come in a range of particle sizes. They are coated with dried corn syrup for a free flowing product. In addition to natural fig flavor, a wide variety of additional fruit flavors and colors (both natural and artificial) are available. Fig Nuggets, either seedless or with seeds, may be colored and flavored.
