
Banana Fig Bran Bread
INGREDIENTS
- 1 packet (1/4 ounce) dry yeast
- 2 1/2 cups bread flour
- 1 cup wheat flour
- 1/2 cup toasted wheat germ or bran
- 1/3 cup instant nonfat dry milk powder
- 2 tablespoons gluten
- 1 teaspoon salt
- 1 cup sliced ripe banana
- 3/4 cup dried California figs*, quartered
- 2 egg whites
- 1 tablespoon canola or vegetable oil
- 2 tablespoons malt extract (or honey)
- 1 teaspoon vanilla
- 1 cup very warm water
PROCEDURE
Measure all ingredients in the order listed into bread machine. Select white bread and push Start.
When done, remove to wire rack and cool. Slice when ready to serve.
Note: Mission figs recommended.
