
California Fig Coconut Balls
INGREDIENTS
- 3/4 cup dried California figs
- 3/4 cup shredded coconut
- 1/2 cup nuts
- 1 teaspoon grated lemon rind
- 1 teaspoon freshly squeezed lemon juice
- Finely chopped sweetened coconut
PROCEDURE
Rehydrate figs by steaming for 6 to 8 minutes over boiling water. Remove stems and grind or process in food processor until chopped fine. Add coconut and nuts to processor or grind into same bowl as figs.
Add nuts, lemon rind and lemon juice, adding juice or water as needed to knead paste until ingredients are thoroughly combined.
Shape generous tablespoonfuls into 3/4-inch diameter balls and roll in finely chopped coconut. Store in covered container.
