Banana Fig Bran Bread


  • 1 packet (1/4 ounce) dry yeast
  • 2 1/2 cups bread flour
  • 1 cup whole wheat flour
  • 1/2 cup toasted wheat germ or bran
  • 1/3 cup instant nonfat dry milk powder
  • 2 tablespoons gluten
  • 1 teaspoon salt
  • 1 cup sliced ripe banana
  • 3/4 cup dried California figs*, quartered
  • 2 egg whites
  • 1 tablespoon canola or vegetable oil
  • 2 tablespoons malt extract (or honey)
  • 1 teaspoon vanilla
  • 1 cup very warm water


Measure all ingredients into bread machine. Select white bread and push Start. When done, remove to wire rack and cool. Slice when ready to serve.

Note: Mission variety figs recommended.
Yields: 1 loaf (2 1/2 pounds);
Serves: 12;
