Optional garnishes: plain Greek yogurt, sour cream, minced green onions
Directions
Heat oil in a large nonstick skillet over medium heat. Add onion, peppers, and garlic. Sauté 5 minutes, until onions and peppers are slightly softened. Add turkey; cook, stirring and breaking up meat until lightly browned, 4 to 6 minutes.
Stir in chili powder and cumin, cook for 30 seconds. Stir in figs, cook 1 minute and then add tomatoes and beans with their liquid.
Bring to a boil, then reduce heat and gently simmer, stirring often, about 8 minutes. Remove from the heat and serve. Top with optional garnishes, if desired.
