- 1/3 cup brown sugar
- 2 tablespoons white vinegar
- 1 cup water
- ½ teaspoon lemon zest
- 2 teaspoons fresh lemon juice
- 1 cinnamon stick
- ½ teaspoon ground ginger
- 4 teaspoons preserved ginger, chopped
- ½ cup California Dried Figs, stems removed and quartered
Combine sugar, vinegar, and water in small saucepan. Stir over medium heat, without boiling, until sugar is dissolved.
Add lemon zest and juice, cinnamon stick, ground and preserved ginger, and figs. Heat to boil. Reduce heat and simmer for 40 minutes or until figs are tender. Cool and serve.
