- 4 large California Fresh Figs
- ¼ cup dark rum
- 2½ ounces white, semisweet, or bitter chocolate

Prick the skin of each fig with a fork in a few places. Add the figs to a medium bowl and pour the rum over the figs. Let stand overnight.
Drain, reserving liquid. Dry figs with paper towel.
Melt chocolate in a small, heavy saucepan over medium heat. Cool slightly. Holding each fig by stem, dip in melted chocolate. Arrange on plate lined with wax paper. Store in refrigerator until chocolate sets.
Simmer reserved liquid in a small saucepan over medium heat until thick and syrupy. Allow to cool; divide and spoon onto 4 individual dessert plates. Arrange one fig on each plate.
