California Fig Turkey Chili

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 1 medium red pepper, cored and chopped
  • 2 garlic cloves, minced
  • 1 ¼ pounds ground turkey
  • ¼ teaspoon fine sea salt
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 cup chopped California Dried Figs
  • 1 can (14.5-ounces ) fire-roasted tomatoes
  • 1 can (15.5-ounces) garbanzo beans
  • Optional garnishes: plain Greek yogurt, sour cream, minced green onions

Directions

    1. Heat oil in a large nonstick skillet over medium heat. Add onion, peppers, and garlic. Sauté 5 minutes, until onions and peppers are slightly softened. Add turkey; cook, stirring and breaking up meat until lightly browned, 4 to 6 minutes.
    2. Stir in chili powder and cumin, cook for 30 seconds. Stir in figs, cook 1 minute and then add tomatoes and beans with their liquid.
    3. Bring to a boil, then reduce heat and gently simmer, stirring often, about 8 minutes. Remove from the heat and serve. Top with optional garnishes, if desired.
